Chocolate Avocado Truffles

Need a dessert that's healthy and easy? Here it is. These chocolate truffles from Samantha Cassetty are made with just two ingredients: avocado and chocolate chips. Two pieces are just 100 calories and have only 1 1/4 teaspoons of sugar. This delicious treat won't ruin your diet and you'll stay on track to reach your goals.

1 Avocado
1/2 cup Dark chocolate chips

Heat the chocolate in the microwave, stirring every 30 seconds until smooth.

Using a fork, thoroughly mash the avocado.

Combine the melted chocolate with the mashed avocado, mixing thoroughly.

Put the mixture in the freezer for about 10 minutes.

Using a cookie scoop, scoop spoonfuls of the mixture onto a parchment-lined baking sheet.

Put the baking sheet in the freezer for at least 30 minutes. Once frozen, store the truffles in a freezer-safe container.

These are best enjoyed when thawed for about 10 minutes. You can also roll the truffles in toppings like crushed freeze-dried strawberries, chopped walnuts or unsweetened coconut flakes.
