Turkey Quinoa Meatballs

These turkey quinoa meatballs will have your dinner guests raiding the recipe drawer, and the family politely begging for more. In either case, this is a recipe for high praise.   

1 pounds Lean ground turkey
3/4 cup Cooked quinoa
1 Egg
2 cloves Garlic (finely chopped)
2 tsp Dried oregano
1/2 cup Thinly sliced scallions
1/2 tsp Salt
3 cups Tomato sauce
1 box (16 oz) Whole wheat pasta

Preheat oven to 350°F.

In a large bowl, combine turkey, quinoa, egg, garlic, oregano, scallions, salt and pepper. Gently mix.

Roll mix into about 1 1/2 inch balls and place on baking sheet. (Mix should yield about 18 meatballs.)

Bake for 20 minutes.

Transfer to a pot with tomato sauce. Simmer together for a few minutes.

Serve over whole-wheat pasta. Enjoy!
