Total Choice Roasted Wild King Salmon

Salmon is an excellent source of protein and contains many essential vitamins and minerals. The fish is also low in sodium and pairs well with the delicious flavors of this recipe. Simply mix the ingredients together, and let them work their flavorful magic in the oven. You will be pleasantly surpised that such little time could result in such a tasty meal. 1 tbsp Extra-virgin olive oil
1/4 cup Fine-diced leeks (white part only)
1/2 tsp Finely chopped fresh garlic
Zest of 1 lemon
1/2 tsp Salt
1/4 tsp Coarse ground black pepper
1 tbsp Fresh parsley (chopped)
8 (2 oz) Wild king salmon fillets (skinless, boneless)

Preheat oven to 375 degrees F.

In a mixing bowl, combine first seven ingredients, mixing well. 

Add salmon fillets and toss until coated. 

Fit a wire rack into a rimmed baking sheet. Place salmon on top and bake for about 10-12 minutes or until lightly opaque inside.
