Thai-Style Chickpea Spinach Omelette

½ cup Roughly mashed cooked chick peas
1 cup Chickpea flour
2 tsp Lime zest
2 tsp Lime juice
5 tsp Thai fish sauce
1 (½ cups) Chicken broth or water
1-2 tsp Jalapeños
2 Eggs
2 cups Chopped baby spinach
Grape seed oil for cooking
Cilantro and hot sauce for serving (optional)

In a large bowl mix all ingredients until well combined.

Let batter rest for an hour.

In a hot skillet add a little oil, ladle about ¾ cups of the batter out, swirl the pan to distribute the batter and cook until nicely browned on the underside, about 2-3 minutes. Carefully flip the omelette and cook the underside for another minute or two.

Serve sprinkled with some cilantro and drizzle a little hot sauce over each omelette before serving.
