Kale for Healthy Skin

Kale is a good source of dietary fiber, protein and vitamins. Why not eat your greens and enjoy them, too? Every forkful of this dish is a great blend of both sweet and spicy. The combination of textures and flavors is sure to have you wanting more.

2 tbsp Olive oil
1 tsp Chopped garlic
1/2 tsp Red pepper flakes
1 Medium jalapeno (halved, seeded and thinly sliced)
1 Medium sweet onion (chopped)
10 oz Baby kale
1/4 cup Raisins
1/4 cup Pine nuts

Heat oil in large pan.

Add red pepper flakes, jalapeno, and onion and cook until onion becomes translucent, about 5 minutes.

Add garlic and continue cooking until garlic becomes fragrant, about 30 seconds.

Toss in kale and raisins and cook, stirring occasionally, until kale is wilted, about 3 minutes.

Stir in pine nuts before serving.

Makes 2 servings.
