Steve Weatherford’s Steak Pizzaiola

Steve Weatherford shares his tailgate favorite that is simple to make and easy to clean up. Use meat as a pizza-crust substitute to cut down on carbs while enjoying the tenderness and juiciness of a steak. All you have to do is wrap the ingredients in foil and pop them in the oven for an easy meal.

8 oz Lean filet mignon (cut into 2-inch cubes)
2 cloves Garlic
½ Spanish onion
2 slices Yellow pepper
2 slices Red bell pepper
2 Baby portobello mushrooms
½ Ripened tomato (chopped)
1 tbsp Fresh basil (chopped)
1 tbsp Extra-virgin olive oil
1 Fresh bay leaf
½ tsp Salt
½ tsp Black pepper

Preheat oven to 350°F. Place the filet mignon onto the foil. In a bowl combine all of the ingredients. Mix ingredients well and place on top of the beef. Wrap in foil. Bake in the oven for 18–20 minutes.
