9 oz Artichoke hearts (quartered)
1 Red onion (diced)
5 cups Tomatoes (diced)
2 cloves Garlic (thinly sliced)
Freshly ground pepper
1 cup Dry white wine
1 lb Scallops
2 Avocados (diced)
Heat oil in a large skillet.
Add artichoke hearts and cook until they begin to brown, about 3 to 4 minutes.
Stir in onion and cook until translucent, about 4 minutes.
Add tomato, garlic, salt, pepper and cook for 10 minutes.
Add wine, scallops and avocado and cook for 5 minutes.
Makes 8 cups.
