Scallop and Artichoke Medley

This dish is packed with tons of flavor and nutrients your body needs. The artichoke hearts and avocados add fiber to the dish, and the scallops are a good source of protein and iron. In less than 30 minutes, you can prepare a meal your whole family will enjoy.  

2 tbsp Grape seed oil
9 oz Artichoke hearts (quartered)
1 Red onion (diced)
5 cups Tomatoes (diced)
2 cloves Garlic (thinly sliced)
pinch Salt
Freshly ground pepper
1 cup Dry white wine
1 lb Scallops
2 Avocados (diced)

Heat oil in a large skillet.

Add artichoke hearts and cook until they begin to brown, about 3 to 4 minutes.

Stir in onion and cook until translucent, about 4 minutes.

Add tomato, garlic, salt, pepper and cook for 10 minutes.

Add wine, scallops and avocado and cook for 5 minutes.

Makes 8 cups.
