2 cloves Garlic (thinly sliced)
2 tbsp Ginger (thinly sliced)
1 tbsp Olive oil
16 oz Fresh spinach (washed)
2 slices Ham (optional)
Salt and pepper (to taste)

In a non-stick medium pan, sauté the garlic and ginger in olive oil. Add the sliced ham, if desired, and sweat for 1 minute.

Add the spinach, stir well together and cover for 2 minutes. Stir mixture together to allow spinach to absorb all of the flavor. Cover for another 2 minutes till the spinach softens.

Serve immediately with a side order of rice or as is.
