1 tbsp Lime juice
1 tbsp Chopped cilantro
1/4 tsp Sea salt
1/8 tsp Ground chipotle pepper
2 tbsp Walnut oil
2 Romaine lettuce leaves
8 oz Nitrate-free sliced roast beef
1/4 Medium cucumber (thinly sliced)
1/4 Medium red bell pepper (thinly sliced)
2 tbsp Thinly sliced white onion

Combine the lime juice, cilantro, salt and chipotle pepper in a small bowl. Slowly whisk in the oil.

Place a lettuce leaf on each of two plates. Top each with half the roast beef, cucumber, bell pepper and onion. Drizzle with lime mixture and serve.
