This crispy baked chicken provides the same taste of fried chicken without the unhealthy ingredients. This recipe is diabetic-friendly and great for the whole family. Rev Run says the trick is to coat the chicken in eggs with crispy rice cereal and seasonings to create a fried chicken-like taste and texture.
2 cups Crispy rice cereal
1/4 tsp Garlic power
1/2 tsp Onion powder
1/2 tsp Paprika
1/4 tsp Pepper
1/4 tsp Salt
1/2 tsp Dried Italian seasoning
2 tbsp Water
Nonstick vegetable cooking spray
1 cup Long grain brown rice (cooked according to directions without salt or fat)
Preheat oven to 350°F.
Crush crispy rice cereal in a bowl and add garlic powder, onion powder, paprika, pepper, salt, and Italian seasoning. Mix well.
Whisk egg and water in a shallow bowl and coat chicken breast with egg mixture, then coat chicken in crushed cereal mixture.
Place on a baking sheet that has been sprayed with nonstick cooking spray.
Bake uncovered for 1 hour or until done.
