2 Hard-boiled eggs
1 tbsp Diced carrot
1 tbsp Diced cucumber
1 tbsp Diced green onion
1 tbsp Diced tomato

Cut hard-boiled eggs in half lengthwise.

Remove the yolks to a small bowl.

Add finely diced carrot, cucumber, green onion, and tomato (about 1 tablespoon of each).

Break up the yolk and combine with the veggies.

Fill each half of the hard-boiled eggs with the vegetables.
