Turkey Quinoa Meatballs

These turkey quinoa meatballs will have your dinner guests raiding the recipe drawer, and the family politely begging for more. In either case, this is a recipe for high praise.   

1 pounds lean ground turkey
3/4 cup cooked quinoa
1 egg
2 cloves garlic, finely chopped
2 tsp dried oregano
1/2 cup thinly sliced scallions
1/2 tsp salt
3 cups tomato sauce
1 box (16 oz.) whole wheat pasta

1. Preheat oven to 350°F.


2. In a large bowl, combine turkey, quinoa, egg, garlic, oregano, scallions, salt and pepper. Gently mix. 


3. Roll mix into about 1 1/2 inch balls and place on baking sheet. (Mix should yield about 18 meatballs.) 


4. Bake for 20 minutes.


5. Transfer to a pot with tomato sauce. Simmer together for a few minutes.


6. Serve over whole-wheat pasta. Enjoy!
