Raw Lasagna

This no-cook zucchini salad from Tom Brady and Giselle B√ľndchen's diet is reminiscent of lasagna but is made with non-dairy cashew cheese instead. Try it as an indulgent snack between lunch and dinner.

5 zucchini
1 cup pesto
1 cup cashew cheese

1. Use a mandoline to slice zucchini into large noodle-like slices.


2. Spread pesto and cashew cheese on top of zucchini slice. Add another zucchini slice and repeat the layering process.
