Peanut Butter Pudding

If you think healthy and dessert are two words that don’t go together, think again. This recipe combines both in a delicious, creamy pudding by merging two healthy and decadent favorites together. Dark chocolate, cocoa powder and natural peanut butter keep the saturated fat low and the antioxidants high. Bananas add their natural sweetness and the tofu provides plant-based protein to help keep you feeling fuller and more satisfied than you would after eating a typical high sugar dessert. 2 oz 70% cocoa bitter sweet chocolate
1 cup natural peanut butter, no sugar or corn syrup
12 oz silken extra firm tofu
2 bananas, peeled and large diced
1 3/4 tbsp agave nectar
1 tbsp vanilla
6 tbsp cocoa powder, unsweetened

Combine chocolate and peanut butter in glass bowl and microwave for 30-second increments stirring each time until chocolate is melted and blended with peanut butter.

Add tofu to food processor and process until smooth, scrape down sides of bowl, add bananas and process until smooth.

Add agave, vanilla, cocoa powder and process until smooth.

Add melted chocolate and process until smooth, remove and scrape into individual serving dishes or large bowl.

Cover and refrigerate.
