Livia Martinez-Perez’s Fiber Bowl

1/2 cup unsweetened almond milk
1/2 cup old-fashioned oatmeal
2 tbsp flax seed/chia seed blend
1/2 tsp coconut oil
1/2 tsp cinnamon
2 large strawberries
6 blueberries
1/4 cup almonds
1/4 cup walnuts
1/4 cup pumpkin seeds

1. Bring almond milk and water to a boil over medium heat.


2. Reduce heat to medium-low, stir in oats, flax/chia seed mix, and coconut oil.


3. Cook for 6 to 7 minutes until oats are tender, stir frequently. Remove the pot from heat and let sit for 2 minutes.


4. Top with cinnamon, strawberries, blueberries, almonds, walnuts, and pumpkin seeds.
