Dr. Josh Axe's Mashed Caul-tatoes

This keto-approved recipe puts a healthy twist on a dinnner favorite. Whip up this dish in less than 5 minutes and serve these mashed caul-tatoes alongside a main dish or enjoy on its own — either way you're in for a treat.  

Recipe from Keto Diet by Dr. Josh Axe 

1 medium head of cauliflower (about 1 1/2 lbs)
1/4 cup grass-fed butter
1/4 cup minced chives
3 roasted garlic cloves, chopped
1/2 tsp sea salt
1/2 tsp black pepper

1. In a large pot filled with water, boil 1 medium head cauliflower for 7-10 minutes, or until tender. 


2. Drain the cauliflower. 


3. In a food processor, add the cauliflower, butter, chives, garlic cloves, sea salt, and black pepper.  Blend until smooth and serve hot.
