The apples and almonds in this mealtime staple add delicious texture and an extra fiber boost! Try this recipe from Biggest Loser trainer Dolvett Quince's new 21-day plan to lose two dress sizes, featured in his book The 3-1-2-1 Diet: Eat and Cheat Your Way to Weight Loss.
1 cup quinoa, rinsed and drained
1 cup chopped apples
3/4 cup sliced almonds, toasted
1 tbsp olive oil
2 tbsp raspberry vinegar
1 tsp Truvia
In a medium saucepan, bring the water to a boil and add the quinoa. Cook for 10 to 15 minutes over medium to low heat, until the water is absorbed and the quinoa is tender. Let the quinoa cool before adding the apples and almonds.
Combine the olive oil, vinegar and Truvia in a small bowl. Toss it with the quinoa mixture and chill for at least 30 minutes before serving.
