Cod and Kale

This healthy and tasty dish will take practically no time at all to make. You can either make the balsamic glaze yourself by reducing balsamic vinegar in a pan until it becomes thick and syrupy, or you can buy it already made in the supermarket.

Makes 4 servings

2 tbsp olive oil
1 cup mushrooms, diced
2 cloves garlic, thinly sliced
1/2 lb kale, chopped
1/2 tsp salt
ground pepper
1/2 cup tomato sauce
2 tbsp capers, drained and rinsed
1/4 cup pitted black olives
1 1/2 lbs cod, cut into 2-inch pieces
balsamic vinegar glaze

In a large pan, heat the oil on medium-high. Add the mushrooms and cook, stirring for about 5 to 7 minutes, until they start to brown. Stir in the garlic and cook until fragrant, about 30 seconds. Add the kale, salt and pepper and cook for 4 minutes. Add the tomato sauce, capers, olives and cod and cook covered until fish is done, about 5 to 7 minutes.

To serve, brush the fish with a little balsamic glaze.
