The combination of beets and blueberries is not a common one, but it tastes so good. Plus, both beets and blueberries give the body essential nutrients. Toss this salad together quickly for a healthy appetizer or main course.
1 1/2 cups blueberries 3 cups diced red beets 1/2 cup thinly sliced scallions, white and green parts 1 tsp ginger 2 tbsp apple cider vinegar 2 tsp maple syrup 1/2 tsp salt 2 tbsp grapeseed oil
1. In a medium or large bowl, combine blueberries, beets, scallions, and ginger.
2. Sprinkle with vinegar, maple syrup, salt, and oil. Toss well and serve.
