Avocado Plum Salad

This sweet summer-inspired salad is loaded with monounsatured fats and vitamins A, C, and K. Try this nutrient-rich arugula salad for a low-calorie lunch option.

2 avocados, diced
1 ripe plum, diced
1 medium sweet onion, diced
2 cups arugula
2 tbsp olive oil
1/4 cup apple cider vinegar
1 tbsp maple syrup
sprinkle of sea salt

Combine all ingredients in a medium bowl, let them marinate for 15 minutes, then serve.
