Avocado Mashed Potatoes

Nothing tastes more homey and cozy than a hot bowl of creamy mashed potatoes. Give your favorite comfort food a twist by throwing in avocados for flavor and texture. You can enjoy the buttery goodness of mashed potatoes, without all the calories and fat! 

5 Yukon Gold potatoes
2 medium avocados
½ cup nonfat milk
1 tsp lemon
1 tsp salt
1 tsp garlic powder

1. Peel and quarter the potatoes, then wash them thoroughly.


2. Place them in a large pot of salted water and cover to bring to a boil. Reduce heat and simmer for 20 minutes, then peel and pit the avocados.


3. When cooked through, drain potatoes and transfer them to a large bowl.


4. Mash the potatoes and avocado while slowly adding milk and lemon juice. Finish with salt and garlic powder to taste.
