The Pioneer Woman's Pasta With Vodka Cream Sauce

This simple pasta recipe takes only 15 minutes to prepare, which makes it the perfect recipe when unexpected company drops by. When you're under a time crunch, quickly whip up this delicious, hearty meal that's sure to impress your company. You can even add in chicken, shrimp, kale, spinach, or any other pasta toppings you have in your fridge to make this meal bigger and better.

1 lb Pasta
2 tbsp Olive oil
2 tbsp Butter
1 Medium onion (finely chopped)
2 cloves Garlic (chopped)
3/4 cup Vodka
1 can (14 oz) Tomato puree
1 cup Heavy cream
1 pinch Red pepper flakes
1/4 tsp Salt
Ground black pepper (to taste)
1 cup Grated Parmesan cheese

Cook pasta according to package directions. Be careful not to overcook, pasta should be al dente.

In a large skillet over medium heat, add the olive oil and butter. When the butter is melted, add the chopped onion and garlic into the skillet. Stir and allow onions and garlic to cook for two minutes.

Pour in the vodka; stir and cook for three minutes. Stir in the tomato puree and red pepper flakes.

Reduce heat to low and stir in the cream. Allow the mixture to simmer, being careful not to overheat. Sprinkle in the the salt and pepper.

Drain the pasta but reserve one cup of pasta waster in case the sauce is too thick.

Add cooked pasta into the sauce, and toss to combine. If the sauce is too thick, splash in a bit of the pasta water until desired consistency is reached. Then, stir in the Parmesan cheese and serve.
