Pear and Parsnip Soup

Whip up this light, creamy soup quickly as an afternoon snack or to serve at a party. This soup's unusal flavors make it the perfect treat in the winter or the summer. Serve it hot or cold, and enjoy!

1/2 lb Pound parsnips (peeled and cut into large chunks)
2 Ripe pears (cored and cut into large chunks)
4 cups Chicken or vegetable broth
1 Avocado (diced into large chunks)
1 tbsp Lemon juice
pinch Salt
Parsley (for garnish)

Bring the parsnip and broth to a boil in a medium or large soup pot.

Add in the pears and bring back to a boil.

Once boiling, lower heat and simmer for about 10 minutes (until parsnips are soft).

Carefully transfer the soup into a blender – do it in batches, if necessary. Add in the avocado and the salt and blend until smooth and creamy.

Serve hot or cold, topped with chopped parsley.
