Peach, Cucumber, and Avocado Salad

Get a little taste of summer all year long with this fresh and colorful salad. Packed with vitamins, this recipe is perfect for a quick lunch or as an appetizer to impress guests. 

1 Medium English cucumber (sliced into 1/2 inch rounds)
1 Avocado (peeled, pitted and diced)
2 Ripe peaches cut into 1 inch pieces
1 cup Blueberries
1 Vidalia onion (halved and thinly sliced)
1/3 cup Rice vinegar
1/2 tsp Salt or more to taste
1 tbsp Grape seed oil

Assemble all ingredients in a large bowl. Sprinkle with the vinegar, salt, and oil and gently mix until well-combined.
