Can't get the thought of pasta with alfredo sauce out of your head? Try this pasta with avocado sauce recipe instead, which will taste just as creamy but give you a boost of healthy fats as well.
1/2 cup Basil leaves
1/2 cup Baby spinach leaves
2 Garlic cloves
2 tbsp Lemon juice
1/3 cup Grated Parmesan cheese
1/2 tsp Kosher salt
1/3 cup Olive oil
8 ounces Pasta
Cook the pasta according to the package instructions. Reserve 1 cup of pasta water.
Add the avocado, basil, spinach, garlic, lemon juice, cheese and salt in a food processor or blender and puree until smooth. With the blender running, stream in the olive oil until incorporated.
Pour the sauce over the pasta and toss to coat. Add some of the pasta water as needed to thin out the sauce to desired consistency.
Season the pasta with salt and pepper to taste.
