Pa Pa's Pumpkin Pie

Traditional pumpkin pie is often filled with high volumes of fat, sugar and empty calories. This pumpkin pie mousse has all of the flavor of a traditional pumpkin pie, but with none of the guilt. Pumpkin is a great source of beta-carotene, potassium and fiber. Another primary ingredient in this dish is tofu, a terrific source of light, inexpensive and energizing protein that adds the perfect texture.   

1 Large ripe banana (peeled and broken into chunks)
8 oz Extra-firm tofu
1 cup Cooked and peeled sweet potato
15 oz Canned pumpkin
1 tsp Cinnamon
1/4 tsp Ground ginger
1/4 tsp Nutmeg
1 tbsp (plus 2 tsp) Pure maple syrup

Place banana in food processor and pulse until smooth.

Add tofu and pulse until smooth.

Add remaining ingredients and pulse until smooth, stopping occasionally to scrape down the sides of the bowl. Pulse until thoroughly mixed.

Spoon mixture into individual bowls or one large bowl, cover and refrigerate for at least 1 hour before serving.
