Oatmeal Grits

This twist on traditional oatmeal is both healthy and savory. Don’t have time to jumpstart your day with a nutritious and delicious breakfast? Think again. Chef Art Smith, a favorite of celebrities like Oprah Winfrey and Lady Gaga, shares this easy, fast and yummy breakfast recipe – and it’s under 300 calories!

1 cup Cooked oatmeal
1 cup Chicken broth (low sodium)
1/2 tsp Hot sauce
3 tbsp Grated Parmesan cheese
1/2 cup Blanched broccolini
1 cup Roasted mushrooms
1/2 tsp Minced fresh chives

Place oatmeal and broth into sauté or sauce pan. Bring mixture to a boil and reduce heat and simmer for 4 minutes until hot and creamy consistency – do not overcook. Add broccolini and blend with oatmeal. Simmer 1 minute and remove from heat.

Add hot sauce, cheese and blend into oatmeal, make sure all cheese is melted. Mound grits into center of the bowl. Roast or sauté mushrooms and arrange over grits and sprinkle chives on top.
