No-Guilt Lobster Roll

This summer I was getting very envious. For some reason, a lot of my friends were posting pictures on Facebook of themselves digging into luscious lobster rolls up and down the east coast. My mouth was watering.

Of course, a traditional lobster roll isn't the most slimming food when slathered with velvety mayonnaise. I was inspired to create this lightened-up version that indulges the craving without being a complete diet buster.

2 Whole-wheat hot dog buns
1/2 tsp Softened butter
1/2 cup Small diced cucumber
1 Diced avocado
1 cup Cooked lobster meat cut into large pieces
1 Tomato (seeded, cut into small dice)
1/2 cup Finely diced sweet onions
1 Lemon juice
Freshly ground pepper
Lemon slices for garnish
1/4 tsp Sea salt

Brush the hot dog buns with the butter and toast in a hot skillet until golden. Set aside.

In a medium bowl gently combine the cucumber, avocado, lobster meat, tomato, onions lemon juice, sea salt and pepper.

Divide between the 2 hot dog buns and serve garnished with a slice of lemon.
