No-Bake Red Energy Balls

Indulge in this healthy vegan recipe that will keep you feeling endlessly energized. Inspired by Ron Howard's passion for science and energy and his love of mars, Dr. Oz created no-bake red energy balls to keep you satisfied for hours. This on-the-go treat is easy to make and will give you the nutrients you need when you are rushing out the door. 

9 Medjool dates (pitted and soaked)
1 Large organic cooked beet (chopped)
1/2 cup Almond flour
1/2 cup Unsweetened shredded coconut (plus more for rolling)
1/4 cup Raw almonds (chopped)
1/4 cup Chia seeds
1/2 tsp Pure vanilla extract

Add all of the ingredients for the energy balls to a food processor and turn it on. Process until a thick paste forms. Note: You will need to stop the food processor several times to scrape down the sides with a rubber spatula.

Transfer the ball mixture to a sealable container and refrigerate for 15 minutes, allowing mixture time to chill and set up.

Form 12 to 14 balls out of the beet-coconut mixture, then roll the balls in shredded coconut.

Store energy balls in a sealed container in your refrigerator for up to 5 days.
