kale salad

Incorporate lots of vitamins and nutrients into your diet without the added hassle of preparing a meal using this easy salad recipe. This dish takes less than 10 minutes to make a quick and easy lunch, dinner, or side dish.

3 cups Kale leaves (thinly sliced)
2 tbsp Extra virgin olive oil
1 tbsp Dijon mustard
Kosher salt and black pepper (to taste)
4 Radishes (quartered or halved)
1/2 cup Zucchini (thinly sliced)
1/2 cup Grape tomatoes (halved)

In a large bowl, vigorously massage the kale leaves with both hands until the kale darkens and breaks down, about 3 minutes. Set aside.

In another large bowl, whisk together the olive oil, vinegar, and mustard. Season with a pinch of salt and twist of black pepper to make the dressing.

Add the kale, radishes, zucchini, and tomatoes to the bowl with the dressing. Season with more salt and pepper and toss together.
