Mango Pudding

When mangoes are out of season, you can use dried mangoes soaked in soy milk overnight for this recipe.

1/4 cup Raw almonds
2 Ripe mangoes (peeled and cut into pieces)
1 Banana
3 Pitted dates
1/8 cup Unsweetened shredded coconut
1/2 tsp Vanilla
1/4 cup Currants
1/8 tsp Cinnamon

Grind almonds in a high-powered blender and then add mangoes, banana, dates, coconut and vanilla and blend until smooth and creamy.

Place in a bowl, stir in currants and sprinkle with cinnamon.

Chill for at least two hours before serving.
