Maitake and Garlic Brown Rice

Re-invent your rice with this tasty brown rice recipe. This delicious dish is perfect to serve alongside cooked vegetables, chicken, and even to spice up your stir-fry. 

1 tbsp Olive oil
10 oz Maitake mushrooms separated into small clusters
Freshly ground pepper
2 cloves Garlic (chopped)
4 cups Cooked brown rice
3/4 cup Chopped parsley

In a large pan, heat the oil and stir in the mushrooms. Cook on medium heat for about 7-10 minutes, until they start to brown.

Once cooked, sprinkle the mushrooms with salt and pepper, and then add in the garlic.

Add rice in the pan and cook until heated it's through. Before serving, stir the parsley into the rice.
