1 lb Steamed cauliflower
7 oz Shredded cheddar cheese
7 oz Shredded mozzarella cheese
3/4 cup Milk
Parmesan (for topping)
Breadcrumbs (for topping)
Bring pot of water to a boil and add pasta.
Cook until desired doneness is achieved.
Puree cauliflower, cheddar cheese, mozzarella and milk.
Combine pureed mixture with cooked pasta and place in a baking dish.
Sprinkle with breadcrumbs and parmesan cheese and bake at 350 F for 25 minutes.
