Low-Carb Italian Chicken Almond Meatballs

This viewer recipe is a healthy twist on comfort food.

1 lb Ground chicken breast
4 Sprigs fresh parsley chopped
1 Egg
1/3 cup Ground almonds (almond meal)
4 tbsp Grated Pecorino-Romano cheese
1/8 tsp Garlic powder
1 pinch Salt and pepper

Preheat oven to 350 degrees.

Mix all ingredients together in a bowl and make golf-ball-size balls.

Sauté the balls in a frying pan with olive oil or avocado oil until browned on both sides, then bake in oven for 10 minutes.

Serve with marinara sauce and garnish with grated cheese.

Makes 12 meatballs.
