Lemon Caper Dressing for Salads

1 Medium lemon
3 tbsp Finely chopped sweet onions
2 tbsp Dijon mustard
2 tbsp Drained capers (finely chopped)
1/4 cup Extra-virgin olive oil

Zest 1 lemon into a bowl and set aside.

Squeeze the juice from the lemon into the bowl, add the rest of the ingredients, and stir well.
