Lean Turkey Meatloaf with Whole Wheat Breadcrumbs and Mashed Potatoes

For a tasty dinner dish that’s hearty but will still help you burn fat, make this American classic. The mix of lean, healthy ingredients will satiate you without making you feel like you’ve overdone it. And the mashed potatoes are the perfect side dish. Feel free to add a whole wheat dinner roll as a tasty extra treat!

Serves 6

1 lb Ground turkey breast
1 Small onion
3 tbsp Tomato paste
1/4 cup Whole grain breadcrumbs
1 Large egg
1/2 cup Cooked brown rice
1 tbsp Parsley
1/2 tsp Salt
2 cloves Garlic
1/4 tsp Ground black pepper
1/2 cup Shelled edamame soy beans
1/2 cup Boiled potatoes
1/8 cup 1% milk
dash Dill
1 tsp Paprika
1 tsp Garlic powder
dash salt and pepper

Lean Turkey Meatloaf:

Preheat the oven to 350°F. Mix all ingredients in large mixing bowl. Use your hands to completely combine everything. Spray a cookie sheet with cooking spray. Place all of the meat mixture on the cookie sheet, and shape it into a long rectangle. Pat it down to make sure that it will hold its shape while baking. Cover the meatloaf with aluminum foil, and bake, covered for approximately 35-45 minutes.

Mashed Potatoes:

Mash boiled potatoes in a large pot, add in the milk, salt, dill, pepper, paprika and garlic powder. Mash and mix the mashed potatoes until desired consistency. Enjoy!
