Laura Prepon's Herb-Roasted Sweet-Potato Home Fries

Try Laura Prepon's recipe for a bowl of sweet-potato goodness; these home fries are a healthy, low-calorie, and tasty side-dish for breakfast, lunch, and dinner. Keep them in the fridge and eat them as the week goes by. Sweet potatoes are an excellent source of vitamins and minerals; they are high in vitamin A, vitamin C, potassium, dietary fiber, and a number of others. From decreasing inflammation to bettering vision, a sting of benefits are linked to eating sweet potatoes.

2 Large sweet potatoes
1 1/4 tbsp Olive oil
1 tbsp Minced flat-leaf Italian parsley
1 tsp Real salt
1 tsp Fresh-ground black pepper
1 1/4 tbsp Olive oil

Preheat oven to 350°F. Rinse and dry sweet potatoes. Cut ends off, then cut into slices an inch thick. Cut these slices into 1- to 2-inch cubes.

Place sweet potatoes on a baking sheet. Drizzle with olive oil, then add parsley and salt. Toss with your hands to coat well.

Place in the oven and roast for 15 minutes. Stir with a spatula, flipping the sweet potatoes over, then roast for an additional 20 minutes, or until a knife can easily pierce them.

Allow to cool, then transfer to a glass container.
