Kristin Cavallari's Almond Butter Sugar Cookies

Oat flour is a great gluten-free alternative to regular white wheat flour. Plus, it's healthier and lower in sugar content making it the perfect baking substitute for people with diabetes.

1 stick Unsalted grass-fed butter (softened)
1 cup Coconut sugar
1/2 cup Almond butter
1 Large egg
1 1/2 cups Oat flour
3/4 tsp Baking soda
1/2 tsp Pink Himalayan salt

Preheat the oven to 350°F. Line two baking sheets with parchment paper.

Using a handheld or stand mixer, cream together the butter, sugar, and almond butter until fluffy. Add the egg and mix to combine.

In a separate bowl, mix the flour, baking soda, and salt with a spoon. Add the dry ingredients to the wet ingredients and mix well. Spoon tablespoon-size balls onto the prepared baking sheets, keeping a little distance between each ball. Bake for 10 minutes, or until they start to turn golden brown. The cookies are thin, so keep a close eye on them so they don't burn.
