Joy Bauer’s Pork Tenderloin, Baked Potato, and Carrots

5 oz Roast pork tenderloin
2 cups Cooked carrots
1/2 Baked potato
2 tbsp Low-fat Greek yogurt or light sour cream
2 tbsp Salsa (optional)

Preheat oven to 450°F.

Season pork with preferred seasonings, like salt, pepper, and fresh rosemary.

In a large skillet over medium-high heat, heat olive oil or vegetable oil. Add garlic and sauté.

Put tenderloin in the pan and sear each side, about 10 minutes.

Transfer meat to a roasting pan and bake, about 20 minutes.

When done, slice and plate with a dollop of Greek yogurt or sour cream and fresh salsa.

Serve tenderloin with cooked carrots and baked potato.
