Hungry Girl's Sheet-Pan Shrimp Bake

Sheet pan recipes are both easy to make and easy to clean up they only use one pan! This tasty dish is loaded with protein and other nutritious ingredients like tomatoes and spinach. Ready in just 30 minutes, this recipe is low-calorie and tastes great.

6 oz Large shrimp (about 12 raw, peeled, tails removed and deveined)
2 tsp Lemon juice
6 oz Fully cooked chicken sausage (about 2 links) sliced into coins
1 cup Cherry tomatoes (halved)
1/2 cup Sweet corn kernels
3 cups Chopped spinach
1/2 tsp Garlic powder
1/2 tsp Black pepper
1/2 tsp Cajun seasoning

Preheat oven to 400°F. Spray a baking sheet with nonstick spray.

In a large bowl, combine shrimp, lemon juice, garlic powder, and pepper. Toss to coat.

Add sausage, tomatoes, corn, and Cajun seasoning. Mix well.

Place spinach on the center of the baking sheet. Evenly top with contents of the bowl.

Bake until shrimp are cooked through and veggies have softened and lightly browned, about 12 minutes.
