Hungry Girl's Cheeseburger Tostadas

Looking to slim down and chow down at the same time? Try this lighter alternative to every hungry girl's dream meal. This recipe contains all the flavors of a juicy hamburger, with an added crunch from the tortilla. Munch your way to satisfaction in just 20 minutes with this recipe.    

2 (6 inch) Corn tortillas
4 oz Raw extra-lean ground beef (4% fat or less)
1/2 cup Brown mushrooms (finely chopped)
dash Garlic powder
dash Onion powder
dash Black pepper
1 wedge Light spreadable Swiss cheese
1 1/2 tbsp Shredded reduced-fat cheddar cheese
2 tbsp Tomato (chopped)
2 tbsp Onion (finely chopped)
1 tbsp Dill pickle (chopped)
2 tsp Ketchup
1 tsp Yellow mustard

Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.


Lay tortillas on the sheet, and spray with nonstick spray. Bake for 5 minutes.


Flip tortillas, and bake until crispy, 3 to 4 minutes.


Meanwhile, bring a skillet sprayed with nonstick spray to medium-high heat. Add beef, mushrooms, and seasonings. Cook, stir, and crumble until beef is fully cooked and mushrooms have softened, 3 to 4 minutes. Add cheese wedge, breaking it into pieces. Cook and stir until cheese has melted and is evenly  distributed, about 1 minute.


Divide beef mixture between baked tortillas, and sprinkle with shredded cheese. Top with tomato, onion, pickle, ketchup and mustard.
