Its hard to believe so much flavor can fit into one bowl. This dish certainly does not lack texture or flavor and is every bit as simple as it is delicious. Lightly sauced and loaded with protein and vegetables, this bowl is sure to fill you up and keep you full and satisfied.
1 1/3 cups Chopped bell pepper
1/3 cup Chopped onion
4 1/2 oz Raw boneless skinless chicken breast (cut into bite-size pieces)
2 tbsp Frozen sweet corn kernels
1 1/2 tbsp Barbecue sauce (945 calories or less per serving)
1 1/2 tsp Light sour cream
1 oz Chopped avocado
Place lettuce in a medium-large bowl.
Bring a skillet sprayed with nonstick spray to medium-high heat. Add bell pepper and onion. Cook and stir until partially softened, about 3 minutes.
Add chicken to the skillet, and season with salt and black pepper. Add corn, and cook and stir until veggies have slightly browned and chicken is fully cooked, about 4 minutes.
Remove skillet from heat. Add barbecue sauce and sour cream, and stir until well mixed and evenly distributed. Let cool slightly.
Transfer contents of the skillet to the bowl. Top with avocado.
