Save Fresh Herbs With Your Microwave

If you have extra sprigs of rosemary or thyme or too many bunches of basil or parsley on hand, don’t let them wilt and turn brown. Wash and dry the fresh herbs, place them on a paper towel and zap them in the microwave on high power for 30 to 40 seconds. This will quickly dry the herbs and will preserve the flavors without cooking them. Store in an airtight container and use within three months of drying for the best taste.
