3 cups Cooked farro
1 cup English cucumber (diced)
1 Large red onion (diced)
4 Tomatoes
2 Green peppers (diced)
1 Medium full head of fennel (diced)
1/2 cup Mint
2 Lemons (squeezed)
1 pinch Salt
2 tbsp Extra virgin olive oil

In a large bowl combine all ingredients and mix well.

Serve salad after letting it sit for one hour, allowing the flavors to marinate.
