Fail-Proof Banana Bread

Popsugar Senior Editorial Director, Rebecca Gruber has the perfect recipe for no-fail banana bread! The trick to making this banana bread healthier is the applesauce; it makes the loaf moist and flavorful. Another way to ensure the bread will keep its texture is by using super ripe bananas, which makes it extra spongy. Try not to over bake this recipe – keep a watchful eye, because when moist crumbs cling to your tester toothpick, it’s done!

1 1/2 cups Whole wheat flour
1 cup All-purpose flour
2 tsp Baking powder
1 tsp Baking soda
1/2 cup Unsweetened applesauce
1 cup Splenda sugar substitute
1/2 cup Regular Egg Beaters egg substitute or 1⁄2 cup egg white, only
2 Medium bananas (mashed)
2 tbsp Nonfat milk
1 tsp Vanilla

Mix all ingredients together either by hand or with an electric mixer, if you have one.

Spray loaf pan with Pam non-stick spray (or an equivalent), then pour batter into pan.

Bake for no more than 45 minutes at 300°F.

Test for doneness with a toothpick at 35 minutes, then every five minutes thereafter (Subtract 10 minutes of baking time when using a glass pan.).
