Dr. Josh Axe's Mashed Caul-tatoes

This keto-approved recipe puts a healthy twist on a dinnner favorite. Whip up this dish in less than 5 minutes and serve these mashed caul-tatoes alongside a main dish or enjoy on its own — either way you're in for a treat.

1 Medium head of cauliflower (about 1 1/2 lbs)
1/4 cup Grass-fed butter
1/4 cup Minced chives
3 Roasted garlic cloves (chopped)
1/2 tsp Sea salt
1/2 tsp Black pepper

In a large pot filled with water, boil 1 medium head cauliflower for 7-10 minutes, or until tender.

Drain the cauliflower.

In a food processor, add the cauliflower, butter, chives, garlic cloves, sea salt, and black pepper. Blend until smooth and serve hot.
