1/2 cup Quinoa
1 cup Water
1/2 cup Frozen edamame
1 cup Kale
1/4 cup Sun-dried tomatoes
2 tbsp Balsamic vinegar
1 tbsp Olive oil

Place quinoa in a pot with water, frozen edamame and kale. Bring to a boil and reduce heat. Cover and simmer for 15 minutes.

Add sun-dried tomatoes. Season with balsamic vinegar and add olive oil.
