Icelandic yogurt is made similarly to the Greek style, by straining yogurt so that the sugary whey can be discarded and a thicker, more protein-dense finished product is left behind. However, Icelandic yogurt is strained even longer than the Greek variety, so it has the highest protein and lowest sugar of any yogurt. If you want to go a different route, Australian yogurt is unstrained, but made with whole milk and stirred with honey for natural sweetness.
