Crazy Southern Sauteed Collard Greens

A Southern staple, collard greens make a great base for many flavors. Mixed with sauteed onion and a kick of cayenne pepper, this dish will become an essential part of your next meal. Fancy a spicier dish? Kick up your collards with additional red pepper flakes and enjoy a good bite; complete with tons of vitamins and minerals. 

8 cups Collard greens (chopped and blanched)
2 tbsp Olive oil
1 tbsp Butter
1/4 cup Onions (finely diced)
1 tbsp Fresh garlic (chopped)
1 tsp Crushed red pepper flakes
1 tsp Black pepper
1 tbsp Vinegar (optional)

To blanch greens, add greens to a pot of boiling water for 30 seconds.

Strain boiling water off and quickly transfer to ready bowl of ice and water.

Let cool and strain. Dry greens and set aside.

In large sauté pan on medium-high heat, melt butter and oil together.

Add onions and garlic, cook until slightly browned, about 4-6 minutes.

Add collard greens, black and red pepper and cook for 5-8 minutes on high-heat, stirring constantly.

Remove from heat. Add vinegar if desired and stir.
