6 oz Dried couscous
4 oz Mix dried fruits of your choice
2 tbsp Fresh ginger (chopped)
1 Medium red onion (sliced)
2 Garlic cloves (chopped)
1 tbsp Fresh coriander (chopped)
2 tbsp Olive oil
10 oz Vegetable or beef broth
Salt and pepper to taste

In a medium to large pan, sauté the fruits and nuts in olive oil for about 1 min.

Remove fruits and nuts from oil unto paper towels to drain off excess oil.

Now, add the onions and ginger into the pan and stir until slightly browned.

Return the fruits and nuts into the pan and add the garlic.

Add the dried couscous, stir until couscous is completely coated with the mixture.

Deglaze with the broth, stir well and bring to a boil. Adjust seasonings.

Cover pan with fitted top.

Turn heat off and let couscous absorb the liquid for about 5-8 minutes.

Using a fork, fluff the couscous and sprinkle coriander on top.

Serve with grilled salmon or chicken. Enjoy!
